Abstract

The plant practice was conducted at Cabuyao Meat Processing Corporation (CMPC) at Pulo, Cabuyao, Laguna from October 27 to December 20, 2011 for 150 hours under the Quality Assurance Department (QAD). CMPC (formerly known as Swift Foods Incorporated – Meat Division) supplies the local and international markets with the best and widest range of meat products through rigid quality standards being employed in all aspects of operation. CMPC is now one of the AAA Meat Processing Plants in the Philippines and was able to acquire HACCP Certification for its products. The main objective of the plant practice was to acquire technical skills and new knowledge in the application of the principles and theories learned in the university through experience during the plant training. Modern technical skills, techniques and working experiences were acquired in analyzing food samples through training and proper application. Problems were encountered during the practicum and some recommendations were made for the improvement of the operations. The plant practice provided the student with the needed working experiences, and gained appreciation of the nature of work of a Food Technologist. The trainee was assigned into three sections of the Quality Assurance Department: Sensory Laboratory/Test Kitchen, Chemistry Laboratory and Raw Materials and Receiving Section in which he conducted sensory tests, physic-chemical analyses and physical inspection of raw materials, respectively.
