Abstract
Of the live varieties studied, the fruit of Cavite Special gave the largest amount of latex per fruit w !tile Davao Solo. Cariflora and Papaya Uwak produced similar amounts of latex per fruit. The papain activity was the highest at 8.6548 enzyme units per gram of papaya sap in Papaya Uwak and lowest in Sinta at 2.7148 enzyme units per grant of papaya sap. Market samples gave a range of 0.30 to 0.83 g latex per fruit and papain activity ranged from 0.5 to 6.5 enzyme units per gram of papaya sap.
