Abstract

The food science and technology practicum was conducted at the Research and Development and Quality Assurance Department of Magnolia Inc./ Ice Cream. The duration of training was from April 27 to May 24, 2011 for 150 hours. The training intended to expose the student in an actual food company to apply and appreciate the concept and principles of food science and technology acquired in the university. During the training in the R&D department, the student was able to conduct sensory evaluation of different ice cream flavors and analyze the results afterwards. In the QA department, the student was able to perform physico-chemical tests for the raw materials and ice cream base mix before freezing. The practicum helped the student to appreciate the job of a food technologist more and provided an insight on how a food manufacturing company operates.
