Abstract
Julian and Centennial varieties of sweet potato ( Ipomoea batatas Poir ) were analyzed for moisture content total nitrogen, tuber density, and the in-situ nitrogen during its development. Nitrogen and tuber density decreased with age. Moisture content increased with age. The Julian variety contains higher percentage of nitrogen than the Centennial variety. Centennial variety has higher percentage of moisture content.
