"Lipase-catalyzed synthesis of B -monoglycerides from coconut oil"

Abstract
Lipase-catalyzed alcoholysis of coconut oil for the production of (t-monoglycerides using a lipase from Rhizopus sp. was studied. The over-all content of tri, di and monoglycerides was measured. Comparative studies were done using methanol, ethanol. 2- propanol, 1-butanol and 1-pentanol: and in all cases, the reaction rate increased with higher chain length of the alcohol. Highest 13- monoglyceride yields were obtained at 45°C and 280 mg lipase with yields at 42.34% and 66.05%, respectively. Different coconut oil-alcohol ratios had minimal effect on the 0-monoglycerides yield. The product formed was analyzed by thin layer chromatography (TLC) and high performance liquid chromatography (HPLC).
