Abstract
Moringa oleifera Lam. or malunggay seeds contain 3.67±0.84% ash content, 36.91± .20% crude fat content, 6.36± 0.63% crude fiber, 38.09± 0.64% crude protein and 14.97 nitrogen-free extract. The results showed that malunggay seeds could be a good source of protein and crude fat. The starch content is 1.25% and total sugar is 2.21%, which indicate that the seed polysaccharide is possibly non-starchy. Sequential extraction was performed on the seeds using water at room temperature, hot water at 60°C, 2.5M KOH ad 6.25M NaOH. The results showed that the cold water fraction yielded 9.4-9.7% while the hot water fraction yielded 5.3-5.76%. The KOH insoluble fraction yielded13.53- 29.24%, which was the highest yield while the KOH soluble fraction, is 5.02-8.02%. The NaOH soluble and insoluble fraction gave 5.49-6.69% and 6.37-10.59% respectively. Thus, the polysaccharides of malunggay seeds are more soluble in alkali and can be classified as hemicellulose containing glucose, xylose, arabinose and rhamnose. The monosaccharide composition of the seeds were analyzed as alditol acetates derivatives by gas chromatography. Results showed that the whole seed contains glucose (71.2%), xylose (13.83%), rhamnose (8.78%), arabinose (4.06%) and traces of galactose. The predominant sugar in the water extract was xylose while the alkali fractions showed glucose, xylose, rhamnose, arabinose and galactose. Based on the composition analysis, the extracted polysaccharides may be mixtures of arabinoxylan or xyloglucan with rhamnose and galactose substituents in addition to cellulose.
