Abstract

RAMOS, RICARDO Jr. de CASTRO, College of Arts and Sciences, University of the Philippines at Los Banos, April, 1993. Quality Assessment of Waste Animal Fat from a Meat Processing Plant for Possible Utilization.

Adviser: Dr. Nieva T. Librojo-Basilio.

The quality of waste animal fat from a meat factory was monitored twice a month for three months. The waste animal fat was compared to tallow fat, obtained from the same factory , in terms of specific gravity, iodine number, saponification number, peroxide value and free fatty acid number.

All parameters gave values that were significantly different at varying sampling time . Likewise, all these values differed significantly between the tallow and waste fat. Although experimental results showed that there are significant differences between the tallow and waste animal fat: in the parameters measured, utilization of the latter into useful products is still deemed possible.

Experiments on soap making for the waste animal fat obtained and results showed that minor chemical were treatment is still necessary to Improve the quality of the soaps obtained.
