Cassava roots were stored under ambient temperature (open and packed) and refrigerated conditions. The total cyanide con-centration were determined on the three portions of the roots (proximal, middle and distal) from the day of the harvest up to the seventh day of storage. In each form of storage, cyanide con-centration was significantly lower at the distal end of the. root as compared to either the proximal end or the middle portion where the cyanide concentrations varied. No significant difference occurred during the first three days of exposure of the roots in all storage forms. However, distinct differences were observed on the fourth day of storage and onwards. A decrease in the cyanide level occurred in the seventh day of storing roots at open storage condition while an increasing cyanide concentration were observed in both the packed and refrigerated roots. Cyanide con-centration varied in three portions of the roots as analyzed daily, however, a general increase in the cyanide level occurred during the storing period. Cyanide concentration increases with increase in temperature.
