Production of partial glycerides was carried out using 2.30 lipase units of Rhizopus delemer. The effects of temperature, incubation time, substrate ratio and water content on synthesis were investigated. Conditions producing the highest yield were identified as 55 C, an oil:glycerol:water mole ratio of 1:6:36 and incubation time of 4 hours. Thin layer chromatography was used to identify the product tormed.
