Abstract

The plant practice was conducted at the Quality Assurance Department of Franklin Baker Company of the Philippines, San Pablo, Laguna from April 15, 2013 to May 10, 2013. Franklin Baker Company of the Philippines is the leading manufacturer and distributor of desiccated coconut in the international market. The desiccated coconuts produced have its different specialty cuts depending on the preference of the customer. Desiccated coconut by-products such as coconut water is processed to develop a new product called coconut water concentrate. The training exposed the student into the career that the food industry will offer him in the future. Also, the student applied the knowledge and skills learned in the University to actual plant operations. The student performed sensory evaluation to come up with a color chart for visual grading of desiccated coconuts. Moreover, different microbial analyses are done for finished products. Environmental swabbing is conducted to all the areas inside the plant wherein the products are processed. Water analysis is performed to ensure that it is suitable for processing operations. These tests are done to make sure that the products are safe for consumption, and within the standards and specifications set by the company. At the end of the practicum, the student was expected to gain competence in the food industry and to write a comprehensive report about the training. Recommended solutions to the problems encountered during the plant practice were encouraged to be raised.
