Abstract

The plant practice was conducted at the Dairy Products and Technology Division, Animal and Dairy Sciences Cluster, College of Agriculture, UPLB, College, Laguna from November 18, 2013 to January 23, 2014. Dairy Training and Research Institute produces quality pasteurized milk and milk products such as fresh milk, chocolate milk, yogurt and white cheese from cows and carabaos (water buffalos). The trainee was able to perform milk analyses such as the organoleptic test, lactometer test, clot-on-boiling test, and acidity test and was involved in daily milk processing operations. Skills and knowledge acquired by the student in the university were put into practical application. Throughout the entire duration of the plant practice, the trainee was able to imbibe a sense of good-working attitude and competency and develop rapport with his colleagues. Problems encountered were taken into consideration and corresponding recommendations were also suggested to improve the working place and to maintain wholesome and quality milk products.
