Abstract

The practicum was conducted at Zagu Foods Corporation, 52 West Capitol Drive, Barrio Kapitolyo, Pasig City, Metro Manila. The company, which started in 1999, focuses in the production of excellent, rationally priced pearl shakes. It continues to push through their mission of customer satisfaction and has blended 40 million pearl shakes with 290 outlets nationwide. The training lasted for 150 hours from April 6 to May 3, 2011. The trainee was assigned in the Quality Assurance and Control Department, Production Department, and Receiving and Warehouse Department. She performed physico-chemical, microbiological, and sensory analyses, monitored practices and processes, and inspected newly delivered raw materials for any defects. The training was conducted for the trainee to apply all concepts learned in the University to the food industry, improve knowledge on food science and technology and acquire experience that will help the trainee in her future career.
