Abstract

The Food Science and Technology plant practice was conducted at Sunrich Manufacturing Corporation, Bldg. 1, Silangan Interchange, Canlubang, Calamba City from April 22, 2013 to May 29, 2013. It lasted for 200 hours. The trainee was assigned at the quality assurance department where tasks include inbound and outbound inspection, physico-chemical test and microbial analysis. The inspection of raw materials included moisture content determination for rice grains, temperature inspection for meat products, and visual analysis of the quality and acceptability for all materials. Physico-chemical tests were done during and after the processing. It includes MC, Aw, Salt, Acid, FFA and POV determination. Detection of microorganisms such as yeast, mold, Escherichia coli, Staphylococcus aureus, Bacillus cereus and coliform were done on final products and swabs using conventional and modern techniques. After the plant practice, the trainee gained additional knowledge and hands-on experience from the food production. Some recommendations that could help the company to improve production practices were cited. With the short stay in the company, the trainee was able to understand more and experience enough the work of a food technologist in a food manufacturing industry. She also realized the essence of a harmonious relationship among employees to achieve the company?s goals.
