Abstract

The plant practice was conducted at the Dairy Training and Research Institute (DTRI), Animal and Dairy Science Cluster, University of the Philippines Los Baños from August 1 to September 10, 2011 for the total of 150 hours. DTRI under the Dairy Products and Technology Development Division controls the processing of milk from the university dairy farm into a range of dairy products specially fresh milk, chocolate milk, yoghurt and white cheese. Theories and principles learned by the student from the university were applied to actual processing plant scenario. Throughout the plant practice, the student gained hands-on experiences on the various dairy plant activities which include milk sampling, quality control testing, milk processing, packaging, storage and cleaning and sanitation. In addition, the trainee gained new information on the different operations in the dairy plant. Problems were recognized during the plant practice and recommendations were prepared to improve state of the dairy plant.
