Abstract

The major plant practice was conducted at The Laguna Creamery Inc. in Brgy. Masaya, Bay, Laguna from April 15 to May 27, 2013. The student was able to experienceprocessing and quality control of milk products on the dairy plant. During the plant practice, the student applied the acquired knowledge from the classroom and had gained more knowledge about dairy technology. The student performed different laboratory tests like the organoleptic and physico-chemical tests and also helped in the processing and packaging of milk and milk products such as liquid milk, yoghurt, cheese, butter and heavy cream. The student performed technicalanalysis on the plant to determineStrengths, Weaknesses, Opportunities and Threats. Frequently encountered problems in the plant were identified on the course of plant practice and recommendations were made to address the weaknesses of the plant. The student was able to create good relationship with her co-workers. Lessons that the student learned and her recommendations for the plant were included in this report.
