Abstract

The author underwent an on-the-job training at the dairy processing plant of Hacienda Macalauan Inc. at Calauan, Laguna from April to May of 2014 for a period of 175 hours. The dairy processing plant provided an avenue for learning how milk is processed into cheese, yoghurt, cream and how liquid milk is processed to create different flavors but extending its shelf life. As a trainee, the author was assigned to perform several quality control and quality assurance test such as microbiological, physicochemical, and water analysis and was also assigned to help formulate new and existing products which include the company's liquid and yoghurt products. The author was able to experience the working environment inside the processing plant and learned the responsibility, as well as the characteristics and attitude a food technologist must have in the industry.
