Abstract

The plant practice was held at Hacienda Macalauan, Inc. situated at Andres Soriano Avenue Brgy. Mabacan Calauan, Laguna from April to May 2014 for a period of 150 hours. Aiming to engage students in real-life food industry experience, the student was given the opportunity to be involved in the dairy processing plant practices and grasp information through keen observation and hands-on laboratory works including chemical and microbiological analysis, research and development procedures. She was able to integrate and apply skills and knowledge gained through the different course works offered by the university. At the duration of the plant practice, the author was exposed with the different processing operations, as well as the quality control management embedded at every section of the plant. Furthermore, she was taught of various laboratory techniques applied by the company in the analysis of raw milk and their other processed dairy products. She was also familiarized with equipment operated in manufacturing the company?s different dairy products, including its maintenance and in-line quality control supervision. The student also developed proper work ethics and good working relationship towards other trainees, quality assurance personnel and production staffs. From this experience, the student was able to lift her confidence, self-reliance towards work and supervisory skills.
