Abstract

The major plant practice was conducted at the Unilever RFM Ice Cream Incorporated in San Ignacio Compound, Manggahan, Pasig City for a period of 150 hours starting from April 15 until May 10, 2010. The company is responsible for producing, Selecta ice cream, one of the leading brands of the ice cream that the public enjoy at present. The trainee was assigned in the Quality Assurance Department – Raw Materials Section. The trainee performed inspection and analyses on dry raw and packaging materials, sensory evaluation, sampling and record-keeping. The trainee practiced the basic procedures that a food technologist considers in performing in a work area. The trainee acquired knowledge and skills that were not showed through the theories and principles taught at the Institute. The training served as an experience that will guide the trainee through the future. The trainee also presented some recommendations for the problems encountered during the training.
