Abstract

The plant practice was undertaken at the Katipunan ng Kooperatiba ng Manggagatas, Inc. (KKMI) at Brgy, Lamot II, Calauan, Laguna from April to May 2014. The plant mainly produces bottled fresh milk, but they also produce other dairy products like yoghurt, chocomilk, and white soft cheese. The student gained invaluable knowledge and experience in working in a dairy plant. The student participated at every opportunity he was assigned to, starting from milk collection to quality control such as oraganoleptic tests, physico-chemical tests and microbiological tests and product filling. The student also experienced working with the plant?s clients, knowing their problems and the usual solutions they employed. The student employed theoretical knowledge he gained at the university while also experiencing the importance of team work and the valuable role of a dairy technologist in the industry. The student analyzed the strengths, weaknesses, opportunities and threats that he observed while working in the plant.
