Abstract

The food science and technology practicum was conducted at Mondelez Philippines Inc., 8378 Dr. A. Santos Avenue, Sucat, Parañaque City from April 10, 2014 to July 31, 2014 for 571.2 hours. The trainee was assigned at the consumer science team of the Research Development and Quality Department (RDQ) Mondelez Philippines is a part of Mondelez International which host several of the leading snack brands in the world. The RDQ department of Mondelez Philippines, in particular, caters to two well-known cheese brands in the country, Eden and Cheez Whiz, and well-known powdered beverage brand, Tang. Activities conducted by the trainee are mainly assistance to the consumer science team. These include competitive monitoring of cheese products and powdered beverages, texture, analysis, facilitating and preparation of samples and materials for sensory evaluation tests, and preparation of materials for the innovation fair conducted by the company. At the end of the practicum, the student gained technical skills in sensory evaluation and in various physico-chemical analyses such as particle size distribution analysis and texture analysis. She was also given a bird's eye view of product concept development and the social dynamics in a food corporation.
