Abstract

The plant practice was held at Alaska Milk Corporation in San Pedro, Laguna from April 15 to May 11, 2013. Alaska Milk Corporation is one of the most known milk processing companies in the Philippines. It produces a range of milk products, from canned milk products, to powdered milk drinks and ready- to-drink beverages. The student was assigned to be trained at the Central Laboratory of the Quality Assurance both in the Physical-Chemistry and Microbiology Laboratories. The plant practice exposed the trainee to different physicochemical and microbiological analyses, sensory evaluation, media preparation, preparation of chemical solutions and proper usage and maintenance of laboratory equipment. The trainee acquired information about the strict implementation of the good manufacturing practices by the company especially the 5S (Sort, Set, Shine, Standardize, Sustain). During the duration of the plant practice the trainee learned the different stages before, during and after production of different milk products and the rules implemented to further secure the quality of goods produced.
