Abstract

The Food Science and Technology Practicum was held at the Coca-Cola Bottlers, Philippines, Incorporated, Canlubang Plant with a period of 150 hours. The practicum was intended to apply the student’s knowledge obtained from the university to actual work situations in a food manufacturing company. Activities regarding the quality assurance and control of the company’s sparkling products such as the acceptance of raw materials, monitoring of the bottle washer parameters as well as the ASEBI and the datecoder, checking of the fill heights and assessment of the full goods were undertaken. The student was also assigned in the assurance of the quality of still products where she performed acceptance of packaging materials, PET bottle net content and PET blowing parameters monitoring. The actual work experience in the plant provided the student about the proper manufacture and maintenance of quality for sparkling and still beverages. The importance of GMP and HACCP in a beverage company was appreciated. Good working relationship was also developed during the plant practice.
