Abstract

The practicum was performed at Universal Robina Corporation (URC)- Rosario Plant, Amang Rodriguez Avenue, Pasig City from April to May, 2014. URC is a multinational company engaged in an extensive range of food related businesses, from manufacturing, marketing and distribution of branded consumer food products to Agro-industrial businesses of farms mainly animal feed milling and related products. The student was assigned to the Micro Laboratory of the Quality Assurance Department where she applied the principles and skills acquired in food science and technology courses to the food industry setting. The student did different micro and physico-chemical analyses of finished goods, water, air and equipment. Daily activities include sanitation of the working area, sterilization and decontamination, preparation of media and samples, isolation of desired microorganisms, incubation and determination of microbial population. The practicum gave the student an actual work experience and a professional self-awareness in the food industry. Problems encountered were identified and recommendations were given.
