Abstract

The practicum was conducted at the Quality Assurance Department of RFM-Cabuyao Meat Processing Corporation, Brgy. Pulo, Cabuyao, Laguna from May 22-June 22, 2013 for a total of 155 hours. The company used to produce meat products for Swift. Today the company supplies the beverages of RFM. These products include Sunkist fruit juices, Vitwater, Alo Green Tea and Selecta Milk. The student was able to perform physic-chemical analyses and microbial analyses of raw materials and finished products. In addition, the student was also able to inspect and monitor daily deliveries and documentation of packaging and raw materials. Physico-chemical analyses, such as determination of moisture content, pH, titratable acidity, vitamin C content and refractive index of raw materials and end products, were conducted by the student. The student also performed microbial analysis of raw materials and end products. The student became exposed to the different processes involved in the food industry. As a result, the student gained additional knowledge and skills which helped her improve. Problems encountered during the practicum were given recommendations for the company's improvement.
