Abstract
One of the leading producers and distributors of coconut products here in the country and abroad is the Franklin Baker Company of the Philippines (FBCoP). The company supplies coconut products to large food companies abroad like Hershey?s, Nestle, and others. The student was assigned to the sensory evaluation division of FBCoP. She was tasked to design and conduct a study to determine the shelf-life of coconut water as affected by storage temperature, sterility of and the volume of the container. The author was also tasked to conduct a proficiency test for desiccated coconut. During the plant practice, the author was exposed to the different laboratory techniques used in the coconut industry. The author was also given the chance to use some laboratory apparatus that are not available in the university. Through the practicum, the author was able to apply the knowledge she gained from the university such as different tests in sensory evaluation, titration and others. All these experiences during the plant practice helped the author to become more confident and prepared for the work in the food industry.
