Abstract

The Food Science and Technology plant practice was conducted at Zenith Foods Corporation, a full subsidiary of Jollibee Corporation. The six-hectare plant, located at Carmelray Industrial Park 1, Canlubang, Calamba City, Laguna, serves over 800 Jollibee and Greenwich stores, providing them with safe and high-quality food. The student-trainee was initially given Good Manufacturing Practices and Basic Safety orientations to equip him with essential knowledge as he embarks on the works of a food technologist. The trainee was assigned under the Quality Assurance Department where he performed inspection duties and routine procedures such as proper sampling, physico-chemical analyses, microbiological analyses, and sensory evaluation, from raw material up to the final product. He was also exposed to the actual to the actual manufacturing processes in the commissary. On the last day of the training, report was presented to the manufacturing line supervisors regarding the observations made during the training. These activities enable the trainee to apply the knowledge he gained from the university of the actual manufacturing processes.
