Abstract

The plant practice was conducted at Maycar Foods Incorporated in Brgy. Balintawak, Lipa City, Batangas from May-April 2013. Maycar Foods Inc., a meat processing company running for almost 12 years, is recognized by the National Meat Inspection Service (NMIS) as a double AA-accredited processing plant. It manufactures a variety of meat processed products and supplies the localities of Lipa City as well as its neighboring municipalities. The apprentice was assigned to perform different tasks under the Quality Assurance Department (QAD) such as sampling and sensory evaluation, monitoring of Good Manufacturing Practices (GMP) and Standard Sanitation Operation Program (SSOP), daily room temperature monitoring, water chlorine monitoring, Materials Receiving Inspection, withdrawal of items, receiving returns and Bad Orders (BO), accomplishment of higlight/exemption reports, establishment of specifications as well as Research and Development (R&D). Aside from these technical works, the trainee also gained knowledge about the general procedures and principles in meat processing and packaging. The training gave her a learning experience in the field of professionalism that enhanced core values like self-discipline, punctuality, excellent performance, self-esteem and sociability.
