Abstract

The practicum was conducted at the Dairy Processing Plant, Dairy Products and Technology Development Division (DPTDD) of the Animal and Dairy Science Cluster, College of Agriculture, University of the Philippines Los Baños. The said plant practice was held from November 2011 to April 2012 for a total of 150 hours. Through the plant practice, the trainee was exposed to different dairy products processing and equipment such as homogenizer and pasteurizer. She performed different physico-chemical analyses to determine the quality of raw milk to be used for processing. She was also able to assist on packing different dairy products such as, white cheese, yoghurt, fresh milk, low fat milk and chocolate milk. With the said plant practice, she was able to gain experiences on a real food industry workplace and she was also able to utilize the knowledge and practical applications she had learned from the university.
