Abstract

The practicum was conducted at the Cabuyao Meat Processing Corporation (CMPC) at Km. 47, Brgy. Pulo, Cabuyao, Laguna where the student accumulated 150 hours of work from April 11 to May 10, 2011. CMPC is a company committed to the production of meat products such as hotdogs, sausages, canned meat, and beverages. The student-trainee was assigned to work at the Quality Assurance Department (QAD) where he was designated to work under three divisions: Processed Meat Division, Canned Meat Division, and BEVCO. During the practicum, the trainee performed different tasks for quality assurance such as in-line monitoring, sampling, record keeping, physico-chemical analyses, and sensory evaluation. He also revised some quality assurance forms and calibrated the pieces of laboratory equipment. The practicum gave the student an opportunity to expand his laboratory skills, apply theoretical principles learned in the University, be exposed on actual work industry, and improve his work ethics.
