Abstract

The 150 hour-practicum was conducted at Dole Philippines Inc., Cannery Site, Polomolok, South Cotabato, from April 11 to May 9, 2011. The student was designated to work under the Diversified Products and Packaging Quality Assurance (DPPQA) Department, focusing on Individually Quick Frozen (IQF) products. During the course of the plant practice, a major project was given to the trainee entitled “Effect of Chlorine Dipping Solution to the Sugar Concentration (°Brix) of MG3 Pineapple Chunks.” At the end of the experiment, the student was able to recommend the appropriate initial sugar concentration in °Brix fresh pineapples to be processed in IQF. Aside from that, minor projects was given to the trainee where she was able to evaluate the sanitation system at specific areas in IQF and developed a basic training guide on Cold Store standard operating procedures (SOPs) and good manufacturing practices (GMPs) for Inventory Management Department (IMD). The trainee was able to apply both the minds-on and hands-on learning acquired from the University during the conduct of the experiment. Through the practicum, she was exposed to the actual workplace and experienced some of the most intensive tasks inside the company. Dole has become an avenue for the trainee to explore more about her profession, gain new knowledge, and develop her interpersonal skills.
