Abstract

The training was conducted at Village Gourmet Co. Inc. Las Piñas, City completing 150 hours of work load. The company produces mainly bread and other baked products. The production area of VGCI has ten respective areas where the trainee experienced hands-on training. She was exposed to the different methods and procedures done in each area as well as the duties and responsibilities of a Quality Assurance Officer that involves monitoring of pH, temperature, shelf-life and other parameters essential for the safety of final product. Inspection and verification of raw materials, packaging materials and cleaning procedures were also introduced. At the end of the training, she acquired a greater understanding on the processes involves in bread production. She gained additional knowledge and information and had applied the acquired skills and knowledge from the academe into actual processing involved in a food company. The practical training enabled the student to acquire working skills and experience a real working environment.
