Abstract

Dairy processing was done at the Batangas Agribusiness Center Inc. during May 2, 2011 to May 29, 2011. On the first day of the major practice, he was allowed to observe on the different test in the plant and also to participate in the production area. On the average, 6400 liters of milk were processed daily. Processing of products was done every day. The activities done on the processing plant were analysis of the milk which include platform test, titratable acidity, analysis of fats, total solids and other chemical analyses using Milko Sonic Analyzer and microbiological tests. He also participated in the actual processing of the different products such as pasteurized fresh milk, chocomilk, yoghurt (plain and flavored) and white cheese making. Monitoring of temperature of the different equipment and the delivery van was also done. The knowledge he gained in the classroom was applied and if ever problems arises, he asked the plant workers and dairy technician for help. At the end of the practicum, the student evaluated the plant and the activities done on the plant. The problems encountered solutions to the problems, recommendations and strengths, weaknesses, opportunities and threats (SWOT) analysis were presented.
