Abstract

The student conducted her practicum at the Dairy Training and Research Institute (DTRI), University of the Philippines Los Baños from August 1 to September 27, 2011. The entire training was comprised of 150 hours of plant activities which includes familiarization with the plant equipment and processes; pre-testing, pre-processing, processing, and packaging of milk and milk products; and cleaning of the plant. During the practicum, the student was able to apply the theories learned in the university; technical skills and work experiences in proper handling of milk and milk products were learned. Each single step applied in processing of milk is extremely vital and must be given enough consideration in order to produce milk products of excellent quality. Harmonious working relationship among employers and employees is a significant determining factor in the success of any processing plant and this is a very important lesson learned during the practicum. DTRI was already an institution in milk processing but few details noted regarding the processing and facilities of the plant need improvement. A detailed review of the problems encountered, lessons learned, and recommendations on the processes and activities on the plant were presented.
