Abstract

Sweet sorghum [Sorghum bicolor(L) Moench 'ICSV 25280] syrup was used as a substrate to determine the effects of varying yeast, Brix, inoculum loading, and sterilization on the ethanol yield. A simulation of Brazilian mode of fermentation was also performed. Progressive flask experiments were carried out to determine the best value for each parameter. The ethanol and sugar concentrations were monitored for each flask during the 72 hours of fermentation at certain time intervals time profiles for each setup were generated. Among the three wine yeast used (S. bayanus, S carsbergensis, S. ellipsoideus), S bayanus produced the highest ethanol yield of 7.79 percent (v/v). Compared to 20º Brix and 30º Brix syrup, 25º Brix syrup produced the highest ethanol yield of 10.21 percent (v/v). The study determined that 5 percent inoculum loading does not produce a significantly different ethanol yield compared to 7.5 percent inoculum loading. With a yield higher than the two other setups, 10 percent inoculum loading produced 4.22 percent (v/v) ethanol. Between the two identical setups, the unsterilized setup produced a higher yield compared to the sterilized setup with an ethanol concentration of 7.43 percent (v?v). This yield significantly increased to 7.73 percent (v/v) with the simulation of Brazilian mode of fermentation.
