Abstract
Actual operations and practical applications are observed in the practicum training in Victorias Milling Company, Inc. Sugar processing begins with the extraction of juice from sugarcane through series of roller mills. the juice undergoes clarification to remove large amount of impurities by flocculation and settling. the collected mud undergoes filtration to recover considerable amount of juice while the clarified juice proceeds to evaporation wherein water is removed to produce syrup. The syrup id further boiled that results to a material called massecuite. Though centrifugation, the raw sugar is separated from the molasses. The raw sugar undergoes refining to further remove impurities and obtain higher purity. the process starts with affination followed by carbonatation wherein carbon dioxide is gassed with the limed liquor to precipitate calcium carbonate which absorbs impurities such as colorants and non-sugars. Consequently, it moves on to decolorization for higher degree of color removal. It then goes through evaporation, white pan boiling, centrifugation and packaging. Two refined sugar grades are produced, the premium and standard grade. In line with this is the special topic which focuses on cane analysis using NIR spectrophotometer wherein the obtained results are used to calculate cane payment between the millers and planters.
