Abstract

The practicum was conducted at Dairy Products and Technology Development Division, under the Animal and Dairy Science Cluster which assists in the development of local dairy industry through research, instruction, and extension. The practicum was held form December 04, 2012 to February 15, 2013 for a total period of 150 hours. The trainee was assigned at the Quality Control Department and was trained to examine the milk samples that were allocated and processed to different dairy products. Various physico-chemical tests were performed such as clot-on-boiling (COB), acidity, and lactometer tests. The trainee was exposed and had hands-on experiences of different manufacturing processes of dairy products. The training provided the student a background on how foods, specifically milk, are processed into different dairy products. At the end of the plant practice, the trainee was able to utilize and apply the theories and principles learned from the academe and learned new techniques and methods involved in manufacturing good quality dairy products. The student also improved her time management skills, developed attentiveness, and practiced teamwork during the plant practice.
