Abstract

This plant practice, from June 8 to July 2, 2015 was held in the One-Ways Quality Assurance Department of The Coca-Cola FEMSA Philippines, Inc. Sta. Rosa, Laguna. This on-the-job training program aimed to immerse the student in the actual business processes of food/beverage companies so as to see how certain principles of food science are applied in such industries. In a span of 150 hours, the student was trained in the following production lines: line 6/7 (carbonated drinks), line 5/8 (canned beverages and bag-in-box syrups), and lastly, line 9 (hot fill line, specifically for pasteurized beverages). The different aspects of production in these various lines- from the maintenance and cleaning of the filling machines, to the tests conducted on both the packaging and the beverage itself to assure quality of products- all gave the student insights on how food/beverage companies work on the underlying theories provided by the field of food science.
