Abstract

The practicum was conducted at the Universal Robina Corporation - Rosario Plant which is located in Amang Rodriguez Avenue, Rosario, Pasig City from June 17-July 11, 2015. The practicum was a total of 160 hours. It was held under the supervision of the Quality Assurance - Acceptance and Microbiology Division. In the first part of the practicum which is under the Acceptance Division, the student was trained to conduct different physicochemical analyses on raw materials such as wet gluten analysis, pH, % moisture content, and POV and FFA titrimetric determination and packaging materials such as dimensional analysis, test for solvent retention, seal integrity, barcode verification, etc. The second part was conducted in the Microbiology Lab, which is located in the Bakery Plant. The student was able to conduct routine microbiological analyses. The student experienced how the process of analysis works from the aseptic weighing of the samples to the proper way of reporting the results. The practicum exposed the student to the actual operations of food companies. She was able to gain actual experience which gave her additional knowledge in the realm of food industry through the work of a quality assurance analyst.
