Abstract

The practicum was from June to July 2015 at Magnolia, Inc. situated at General Trias, Cavite. The primary purpose of the practicum was to acquaint the student with the operations of the chosen company that were relevant to her field. The student had been able to familiarize herself with the different equipment, apparatus and reagents used in the laboratory and learned many technical concepts related to food science including the principles of food processing with a focus on the type products manufactured by the company. She was able to perform physicochemical analysis of various oil samples, raw materials and dairy products such as cheese, butter and margarine and to conduct sensory evaluation of different company products processed inside and outside the plant. To ensure quality and safety, the student also observed the practices and rules set by the company. Given the exposure to a new environment, she had developed efficient and appropriate communication with a diverse group of individuals. Generally, the practicum experience enabled the student to appreciate food science and its significance to a greater extent.
