Abstract
The plant practice was conducted at the Philippine Carabao Center (PCC), University of the Philippines Los Banos, College, Laguna from June to July 2015 for a total of 150 hours. PCC, an affiliate agency of the Department of Agriculture, promotes carabao in the Philippines as a multipurpose animal that can be raised for milk, meat, hide, and draft. PCC processes milk from the center?s buffalo dairy farm as well as milk from various assisted groups from Cavite and Lucban, Quezon to produce a wide range of dairy products. Kitchen-type milk processing is used for the production of most dairy products in PCC like yoghurt, white cheese, and pastillas while the production of fresh milk and chocolate milk is done at the dairy plant in DTRI. Theories and principles learned by the student from the university were applied to actual dairy processing scenario. Throughout the plant practice, the student gained hands-on experiences on the various dairy processing activities which include milk sampling, quality control testing, milk processing, packaging, storage, cleaning and sanitation, sales, and marketing. In addition, the trainee gained new information on the different operations in a dairy processing industry. Problems were recognized during the plant practice and recommendations were prepared to improve the state of the dairy processing area.
