Abstract

The practicum was conducted in Goldilocks Bakeshop Inc.Cake Plant at 498 Shaw Blvd., Mandaluyong City from June 2015 to July 2015 for a period of 159 hours and 30 minutes. The student was assigned in the Quality Assurance Office as a Quality Assurance Officer. The products in the plant were cakes and rolls. The student was assigned with the sensory evaluation of cakes, and in the reception of raw materials in the warehouse. The student was also exposed to different technical practices in the corporation like determination of the physico-chemical properties of the cakes and microbiological analysis, and was also exposed to the different monitoring procedures in the company. In the duration of the practicum, the student was able to apply basic principles in her Food Science and Technology Courses, observe and evaluate the different technical practices employed in the corporation, acquire an actual work experience in a food company, and broaden knowledge and enhance skills the student may need in a professional industry setting.
