Abstract

The practicum was held at the Philippine Carabao Center at the University of the Philippines, Los Baños, Laguna for a total of 155 hours from June to July of 2015. The PCC-UPLB has been promoting carabao as a source of income to farmers through meat and milk production and production of other by-products like leather and as draft animal for farmers. The PCC-UPLB is one of the 13 regional centers promoting carabo-based enterprises in its dairy cooperatives and associations. In PCC-UPLB, kitchen-type processing was observed in the production of white cheese, yoghurt and pastillas de leche. Fresh and choco milk were processed in DTRI, located about 200 m away from PCC-UPLB. The student was well-equipped by the university with the general theories and principles regarding food processing, that she applied during her practicum in PCC-UPLB. The student was also exposed with the different laboratory techniques for quality control tests of raw milk and milk products, and was also trained in the sales and marketing area. Proper packaging and sanitation practices were also observed by the student and any problems and recommendations were properly addressed to the director for the improvement of PCC-UPLB. The experience has molded the student greatly not only as a food technologist, but also as a person, and has given her additional knowledge regarding the real scenario in the food industry.
