Abstract

The plant practice was conducted at Philippine Carabao Center National Headquarters and Gene Pool - Science City of Muñoz, Nueva Ecija from January to February 2016 for a total of 150 hours. Philippine Carabao Center is an agency associated with the Department of Agriculture that advocates carabao as a source of milk, meat, hide, and draft which aims to help rural farmers. The trainee was exposed to Central Dairy Collection and Processing Facility and also in Milka Krem, a market venue that support smallholder farmers for their milk produce. During the plant practice, the trainee was assigned to quality assurance/control, production, milk laboratory, marketing, and product development. In the quality assurance/control part, the trainee was designated in receiving of milk from cooperatives wherein she conducted different tests to ensure the quality of milk as well as the microbiological analyses of pasteurized milk, chocolate milk, cheese, yoghurt, pastillas de leche and ice creams. In the production part, the trainee was exposed to different processes of milk products. In the milk laboratory, the trainee was able to analyze milks from dairy cooperatives and other PCC Regional Centers by using the milkoscan and the somatic cell counter. For the marketing part, briefing on how the store was managed was discussed to the trainee. For the last part, the product development, the trainee has the chance to present her own milk product. Throughout the plant practice, the trainee had an opportunity to have hands-on experiences on various dairy processing activities that let her apply what she learned from the university and also gave her new ideas in different operations in dairy processing industry. With the help of this practicum, she was able to have an experience in a dynamic working environment that will surely help her in the future.
