Abstract

The plant practice was conducted at Universal Robina Corporation 9URC) Cereal Plant, located at Brgy. Bagong Ilog, Pasig City from June to July 2015. During the practicum, the student was able to broaden her knowledge in the field of food technology. She was able to observe actual food processing and gained information regarding the machineries and equipment behind it. She was assigned in quality assurance program, and was able to perform different tests on samples. She also analysed the physico-chemical properties of the product such as bulk density, organoleptic properties, wettability, pH, moisture content, and water activity. Moreover, she performed microbiological analysis by swab method and potable water sampling. Aside from these activities, she was also assigned to record keeping. This report includes the problems encountered by the student, and her recommendations for the overall improvement of the plant.
