Abstract

The Meat Processing Line (MPL) of Zenith Food Corporation was found to have low efficiency during the first semester of the year 2012-having able to reach only 73.3% of its target 90% efficiency. In terms of value, this "inefficiency" cost the company losses of around Php 22,350,997 based on the output lost per product. Root causes identified were bottleneck work centers in four key products (!) cutting and manual packaging for the JB Hotdog product (2) manual packaging of chicken Sausage product (3) slicing for Spiced Sausage and (4) slicing for Spiced HAm.Controllable factors and experimental factors, including cost-benefits, were considered and analyzed and alternatives were proposed per product.Each factor was given formulated solutions ranging from interventions in Man(e.g. training of personnel), Method (e.g. correct method of cutting) and Machines (e.g. maintenance, repairs or replacement). For JB Hotdog and Chicken Sausage, a comprehensive training program is proposed for relievers and for the MPL staff. For the Spiced Sausage Product, a change in stuffing length and crating orientation was recommended. And lastly, for the Spiced Ham Product, installation of double blade cut-off knife was found beneficial. When all the proposed solutions are applied, MPL is estimated to increase its efficiency to an average of 91.07% with savings of up to Php35,834,267 for the second semester of 2012.
