Abstract

The major practice was conducted at the Sta. Maria Dairy Farmers‟ Multi-Purpose Cooperative Plant Inc., from October 13 to November 3, 2010. The plant practice provided the student experience on the different operations in the dairy plant. It enabled her to identify problems and formulate possible solutions, and build intra-personal relationships with co-workers. For the duration of her practicum, she was tasked to do both quality and processing. For the quality control, she did organoleptic tests, microbiological tests and compositional analysis of the milk. She was also assigned to assist in the processing up to the packaging of the products. The student was able to apply her theoretical knowledge together with some instructions from the production head and from her co-workers. At the end of her practicum, the student evaluated all activities she participated in the dairy plant. She also did technical analysis of the plant operations which also includes problems encountered, recommendations and strengths, weaknesses, opportunities and threats
