Abstract

A survey of the consumption potential of milk and milk products was conducted on 300 households in the municipality of Santa Rosa, Laguna in 1968.

The survey was supplied with fresh cow's milk by the Canlubang Dairy Farm or with carabao's new milk by individual farmers. Liquid canned milk and milk products were mostly sold in grocery stores in the public market. The frequency with which the households purchased milk and milk products was on the average weekly basis. The quantity of milk and milk products purchased increased as the size of household increased. Weekly purchase of milk and milk products was 2.36 kg. and 0.16 kg., respectively, for households with less than 3 members. Households with more 13 members purchased 4.96 kgs. of milk and 0.90 kg. of milk products per week.

Weekly purchased of milk and milk products also increased as the household income increased. Household with an income below P2999 purchased 1.77 kgs. of milk and 0.19 kg. of milk products per week. Households with income above P18,000 had a weekly purchase of 5.96 kgs, milk and 2.04 kgs. milk products. Similarly, educational attainment of the homemakers was directly associated with the weekly purchased of milk and milk products per household. Homemakers with no schooling purchased 1.66 kgs. of milk and 0.51 kg. of milk products weekly. Those with graduate level education purchased 10.67 kgs. of milk and 0.69 kg. of milk products per week.

Carabao's fresh milk was preferred by 50.33 per cent of the consumers. Cow's fresh milk which ranked as a second preference, was linked by 35.66 per cent of the homemakers. Glass bottles were desired to be used as containers for fresh milk by 72.66 per cent of the consumers. Forty-three per cent of the consumers would want to buy pasteurized fresh milk. Consumers would take either carabao's or cow's milk at a price ranging from P0.20 to P0.35 per glass or half pint. Majority (55.33 per cent) of the consumers would rather pick up their fresh milk supply from the store before 7:00 o'clock in the morning. Ninety-two per cent of the homemakers were aware of the necessity of milk in the diet. Feeding milk to infants shifted from breast to bottle feeding as income of household increased. Seventy-one per cent of the homemakers preferred fresh milk as a refreshing drink. Consumers' preference shifted from margarine to butter as the household income increased. Similarly as the educational attainment of the homemakers improved, the preference for margarine decreased while that for butter increased. Of the 300 households, only 18 per cent had refrigirators.
