Abstract

The major plant practice was conducted at the Dairy Training and Research Institute (DTRI) plant during the summer of the academic year 2007-2008, from March 10 to April 30, 2008. He was first assigned to observed and participate in the processing in the processing the dairy products in the plant. During his practicum, the plant was receiving an average of 360 liters of milk daily. The processing schedule falls on Mondays, Wednesdays, Fridays and Saturdays which are the days that the student was required to be present. The student’s activities were focused on quality control work. He performed milk quality tests such as a clot-on-boiling test, lactometer test, titratable acidity test, other chemical analyses using the EKOMILK milk analyzer, and microbiological tests. He applied the knowledge that be acquired in the classroom as well as some tips from the plant workers and laboratory technician. At the end of he practicum, the student evaluated the activities he performed as well as the plant itself. The problems encountered, solutions to the problems, recommendations, and strengths, weaknesses, opportunities, and threats (SWOT) analysis were presented.
