Abstract

The practicum was conducted at the Alaska Milk Corporation, Magsaysay Road, San Antonio, San Pedro, Laguna from April 2011 to May 2011 completing the 150 hours of work load. The company produces a wide variety of dairy products including powdered milk, liquid canned milk, evaporated filled milk, among others. The trainee was first assigned at the Liquid Milk Plant (LMP) where he learned the different processes involved in producing liquid milk products. At the Quality Assurance Laboratory (QAL) of LMP, different physico-chemical analyses of milk products were done. At the end of the practicum, the trainee acquired a greater understanding on the processed involve and quality control in milk products production. The second half of the practicum was conducted at the Milk Powder Plant (MPP) where he was also assigned in the Quality Assurance division. The author was able to understand and experience how the AMC implemented Good Manufacturing Practices (GMP) in order to produce quality products. He gained additional knowledge and was exposed to modern equipment used in the company. As a food technology student, the author aspired to be a good laboratory analyst in the future. The practicum enabled the trainee to acquire proper working skills and experience a real working environment in the industry.
