Abstract
The lipase activity of Rhizopus javanicus was tested in a cell-free broth of the organism containing enzyme. The optimum reaction pH of the enzyme was between 6.0 and 7.0,*optimum temperature 50°C, length of incubation time was 60 minutes and enzyme volume was 10 ml. The fatty acids produced after the action of Rhizopus javanicus lipase on coconut oil were recovered. esterified and their methyl esters were analyzed by Gas Liquid Chromatography. Chromatographic analysis showed that Caprylic (C.), Capric (C..), Lauric (C..), Myristic (CiA) and Palmitic (C.,) were acted upon by the enzyme. Stearic acid was not detected and apparently not hydrolyzed.
